Tomato Zoodle!

This one took me a few tries, but I finally made a raw, low fat, "pasta" dish that resembles a traditional tomato pasta.  

The bowl: Zoodles (zucchini noodles).  Yellow pepper, thinly sliced.  Grape tomatoes, sliced in half.

The sauce:  3 cups of grape tomatoes or so.  3 sun-dried tomatoes (oil free, salt free), 1 medjool date.

Add sauce to the bowl and garnish with fresh parsley and basil.  For a bit of salty twist add finely chopped celery.   Enjoy :)
